Select ripe calamansi or Kalamansi and wash thoroughly. Cut the calamansi crosswise and squeeze out the juice through a strainer. Don’t forget to measure the juice extracted. Freeze overnight and remove the crystals (tiny particles content of the juice frozen) from the frozen juice. Repeat the same process until fully clear. Make a heavy syrup using 1-2/2 cup white sugar for every cup of calamansi juice. Strain calamansi syrup using a cheesecloth.Store in sterilized bottle and keep inside refrigerator.
