Waldorf Salad

It’s summertime and the long vacation gave me the chance to prepare my favorite recipes; cocktail snacks, fruits and vegetable  salads.I feel more relaxed to make gimmicks and surprises that doesn’t require more time.I’m glad,I get to do all these things better now.Yesterday, I’ve prepared a refreshing Waldorf salad using leftover apples inside the refrigerator.I’ve made a good thing out of the apples turning it into a mouth-watering salad to cheer up the hot day.It’s light and fruity!

Ingredients:

450g (1 lb) red apples

6 sticks celery, washed, trimmed, and thinly sliced.
50g (2 oz.) chopped walnuts
100g (4 oz.) seedless raisins

For dressing:
150 ml. 1/4 pint mayonnaise
50 ml. 2 ft.oz. lemon juice

To serve:
lettuce leaves, washed

Instructions

1. Put the mayonnaise in a large bowl and stir in the lemon juice.

2. Halve and core the apples, but do not peel them. With a sharp knife, chopped into a bite sized pieces.

3. Add the apples to the mayonnaise dressing and stir until the pieces are coated.

4. Add the celery, walnuts, and raisins to the bowl and toss together gently until well mixed.

5.Arrange the lettuce leaves on a large serving plate and spoon the salad on to the centre.
