Fresh Solen with Sauce


4 tablespoons of oil

¼ cup of water

2 tablespoons cornstarch

1 tablespoon garlic, macerated

1 teaspoon sesame oil

1 tablespoon oyster sauce

1 tablespoon garlic, macerated


1 ½ tablespoon of salt

½ tablespoon of pepper powder

1 teaspoon of sugar


1 tablespoon of wine



1. Wash solens clean. Scald in the boiling juice for ½ minute. Ladle out and cool. Shell and tear off outer membrane and the white gland in belly. Place solens on a strainer.

2. Pour oil in a pan. Stir-fry garlic and ginger. Add in solens sesame oil, oyster sauce, and   water to stir-fry with. Season and stir- fry shortly. Drip on wine and cornstarch. Serve.


1. The solen is an antidote for erysipelas. But the white gland in its belly must be gotten rid of.

2. Remember to scald your solens for only ½ minutes. Otherwise, they will become shrunken and hard.
