A quick and easy family favorite.
1 medium melon
3 tbsp. golden syrup
2 tbsp icing sugar
2 tbsp lemon juice
½ tsp ground ginger
Different varieties of local and imported melons are available all year round. Ripe melon should yield to finger tip pressure round the stem end, but the body should be firm.
1. Cut melon in half, scoop out the seeds and disregard them.
2. Make a decorative melon bowl. Cut into zigzag pattern in the shell using a sharp small knife and scoop out melon flesh with a baller.
3.Mix the melon balls, sugar, golden syrup and lemon juice. Spoon the melon balls into the melon bowl.
4.Sprinkle ginger over the melon.
5. Cover the melon bowl with sling film and Refrigerate until wet chilled.
